Miso Soup

"Miso soup" is known to all Japanese and they eat it every day. Usually it is eaten by people with rice. By our eating habit it is eaten only at breakfast, or breakfast and dinner. Well, do you know "miso"? Miso is made from soybean, rice, barley and salt. It is fermented. There are several kinds of miso by region. For example, Akamiso, Shiromiso and Awasemiso. Akamiso's color is reddish brown and taste is strong and salty. Mainly it is eaten by Kanto people. Shjromiso's color is yellow white and taste is soft. Mainly it is eaten by Kansai people. For miso soup, you dissolve miso in soup stock and put your favorite vegetable! For example, tofu, welsh, mushroom, wakame, pumpkin etc. We love miso soup!

Dear Ogicho,
Your recipe and explanation were very clear. Since it became cold, I have been making miso soup every morning. It is a good way to warm up. At first, I was afraid to make my own miso soup, but my students convinced me to try. By making my own, I can save a little bit of money. You gave me some ideas for other ingredients to try in it. Thank you.

Ogicho,
I have to write a comment about Miso Soup because a few months ago I read a novel by a Japanese author named In The Miso Soup by Ryu Murukami. The novel isn't about Miso Soup but about a young man named Kenji who earned a living as a "nightlife guide' to foreign tourists. It was weird and yet interesting story. I couldn't put it down.
Anyway, back to Miso Soup, I had it at Japanese Restaurant a couple of times here in the city I live. I'm familiar with tofu, soft and hard tofu which I like to add into stir fried veggies. Please keep writing. I'm looking forward to read more of your entry.

To Elif
Thank you. Kikkoman Instant Tofu Miso soup is delicious. But you had better make it for yourself.

To anasalwa
Thank you. We don't know that novel. We'll read it if we have a chance.

Until I read your description of miso soup, I didn't know that some people put pumpkin in it. How interesting! Is it good?

Miso soup is very tasty! Foods like that, with such a unique flavor to us in USA, are hard to come by. I can only get instant Miso soup at the "World Market" or at specialty stores :(

It's nothing like the Miso Soup I get at one of the many popular Japanese-run sushi bars, though. Koibito Sushi is a popular chain of Japanese sushi restaraunts here, and they always serve Miso soup. I love it! :) So good!

I like shiroimiso the best because it's less salty, but the akamiso is good if I want a stronger flavor.

What is the difference between Kanto peole and Kansai people? Is that like the american saying black and white people or instead of races you determine by birth regions?

Like I'm a black southern woman, because of the color of my skin and I was born in Alabama, USA.

I love Miso soup! If get to the college campus late and the breakfast lines are all closed I get Miso soup instead of my grits and cheese. Have you ever had grits?
